In my opinion, one is the best things about Valentines Day is the chocolate. To be honest, I could say this about most holidays. Over the past couple of years, my sister and I have gotten together to make our own homemade Valentine’s Day treats, truffles, and candies. It’s fun to make cute pink and red heart-shaped treats all month long and the fact that the main ingredient is usually chocolate means it’s always delicious. Below are ten of our favorite Valentine’s Day candy and treats we’ve made and then a recipe for a delicious recipe we came up with this year for Strawberry Cheesecake Truffles! They’re so creamy, decadent, and full of real strawberry flavor! So if you don’t went to spend $20 on a box of chocolates or even more on roses, try making homemade gifts this year. They really are easy to make (most recipes are no bake) and definitely delicious!

*since flour is considered a raw ingredient, I recommend microwaving it for a minute or spreading it on a baking sheet and baking for five minutes to make it safe to eat. This recipe doesn’t mention this, but that’s what I did.

Strawberry Cheesecake Truffles

Servings: About 15-20 truffles

Ingredients:

1 ounce freeze dried strawberries

3 ounces white baking chocolate or melting wafers

3 ounces cup heavy cream

2 ounces cream cheese, softened

1/3 cup powdered sugar

8 ounces Dark chocolate for coating (can use a chopped baking chocolate bar, melting wafers, almond bark, or chocolate chips)

Pink sprinkles or reserved strawberry powder for garnish, if desired

Directions:

1. Grind strawberries in a food processor until they are a fine powder. Set aside.

2. Put white chocolate in a medium sized bowl and set aside. Heat cream over medium high heat in a small saucepan until it just starts to steam. Pour cream over white chocolate. Allow the mixture to sit for a minute and then stir until combined.

3. Add strawberry powder (reserve 1-2 tablespoons for garnish if desired), softened cream cheese, and powdered sugar to the bowl and mix until combined. Cover the bowl with plastic wrap and refrigerate for one hour.

4. Use a spoon to scoop out 15-20 small balls of the strawberry truffle mixture and roll in your hands to form smooth balls. Freeze the balls for 20-30 minutes, until firm.

5. Meanwhile in a double boiler or heat proof bowl placed over a pot of boiling water, melt dark chocolate until smooth. Once truffles are firm from the freezer, dip each one in the dark chocolate to coat. Place dipped truffles on a sheet pan covered in wax paper. Sprinkle immediately with sprinkles or reserved strawberry powder. Place in fridge once all truffles are dipped, until the chocolate sets.
